Sometimes I just want to curl up and eat a piece of zucchini bread! It's definitely one of my favorite good mood foods. I may not have the best zucchini bread recipe on the planet (send me your recipe if it's better:). However, I haven't found a recipe that tops this one. Recipe:
Mix flour, salt, baking powder, soda, and cinnamon together. Beat eggs, oil, vanilla, and sugar together in a separate bowl. Add dry ingredients, and beat well. Stir in zucchini until well combined. Pour batter into prepared pan. Bake for 60 minutes, or until toothpick inserted in the center comes out clean. Cool in the pan on a rack for 20 minutes. Remove bread from pan, and completely cool, then enjoy! Tips:

I love when I find an easy, cheap recipe that makes a lot of food, and then I have leftovers galore that I can put in the freezer and pull out to warm up when I'm feeling lazy. Some people think I'm a little bit weird, but sometimes I don't even warm up my leftovers. I enjoy the cool sensation of eating food cold. It's refreshing! Also a little weird, I know. In preparation for the new Avengers movie, my roommates and I decided it would be a good idea to have a movie marathon of all the Marvel movies. This allows some people to get caught up and gives other people a chance to refresh their memory in preparation for the biggest crossover ever! So excited!!!

Originally, I was looking for an easy way to make the chicken sour. After trying several recipes, I discovered someone else's secret to making the chicken sour: Italian dressing. Genius! Then the tricky part was finding the right proportions. I think I've finally perfected this sweet and sour chicken recipe, but you will have to let me know what you think. Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low. Simmer until rice is tender and the liquid has been absorbed, which is about 20-25 minutes. Over medium-high heat, cook the chicken, chopped onion, and onion powder. Combine apricot jam and Italian-style salad dressing in a bowl. After the chicken is cooked, add this mixture until the chicken is well coated. Bake in the oven for 15 minutes. Add the pineapple and chopped red bell pepper and continue baking for another 15 minutes. Serve over the cooked rice. Tips:

All you need to do is cook your ham in pineapple juice. It gives it a nice sweet twang with little to no effort.
