Mix flour, salt, baking powder, soda, and cinnamon together. Beat eggs, oil, vanilla, and sugar together in a separate bowl. Add dry ingredients, and beat well. Stir in zucchini until well combined. Pour batter into prepared pan. Bake for 60 minutes, or until toothpick inserted in the center comes out clean. Cool in the pan on a rack for 20 minutes. Remove bread from pan, and completely cool, then enjoy! Tips:
